Campania Cooking and Sustainable Farming
Tenuta Seliano, an impressively restored agristurismo in the heart of Campania’s mozzarella making region located about one mile from the Greek temples of Paestum. These are some of the best preserved ruins in the world, rivaling those in Athens. The Campania region has given birth to some of the world’s best known Italian foods.  Two successful working farms full with family history dating back to the late 18th century are the backdrop for your cooking and eating experiences.  The family estate consists of many stone buildings, former barns and stables that have been converted into rooms, cottages, dining rooms, cooking school kitchen and living areas.  The farm produces all the food for its own herd of 900 buffalo and horses while providing garden-to-table produce for the cooking school.  The Baroness, Owner Cecilia Baratta attends to all activities.  This is an opportunity to slow down your pace and step into a new rural reality.

You will see the production of Buffalo Mozzarella and taste its rich, white, creamy freshness. The making of olive oil, wine and your own liqueur are a part of the traditional way of life and your experience as well.  Visit the open air green markets that help supply the variety of produce for the hand-on cooking classes that use family and regional  recipes.  A historical culture tour to the ruins of Paestum will take you back thousands of years.  Driving the Amalfi coast road with its breath-taking sea to mountain views will have you planning your next trip back.  All meals and tours are included so that you are free to breathe in the fresh farm air, enjoy dining outside among the roses, relax and understand how it feels to be so close to nature.

This farm estate’s stone buildings that were formerly barns, stables and towers have been lovingly restored into guest accommodations. Family antiques furnish the accommodations. The bedrooms have en-suite bathrooms and are supplied with fresh clean linens and towels. You should bring your own bathing amenities and hair dryer as only simple liquid hand-soap is supplied. There are shops nearby where you can purchase what you need if you forget something. Wireless internet is available. The TV room is located near the dining room. Spend your free-time beside the swimming pool or relaxing in the garden. The air is farm fresh, the flowers are abundant and the authentic rural atmosphere cannot be duplicated in a traditional hotel environment.

The dining room at Azienda Seliano is a converted farm building with ample space for relaxing and lively conversation. Meals may be enjoyed outside in the garden weather permitting. The wonderful dinner will be complete with traditional courses from antipasta to dessert accompanied with wine. The recipes and the preparation have been handed down for generations. Much of the produce used in the kitchen comes direct from the farm only minutes before it arrives at the table.

This authentic regionally based cooking class will be held in the country kitchen of the beautifully restored and converted farm stable at Masseria Eliseo. The morning will be spent learning the hands-on classic techniques and skills of the Italian kitchen’s richness. Dishes will vary with the seasonality of the produce as most of the ingredients are sourced from the farm or the local area. A wonderful variety of foods and preparation will be taught and enjoyed. These are no mere demonstrations, you will put on your apron and get your hands in the dough. You will sit down around the family-style table and enjoy your creations. Learn the production process from storage, curdling, spinning, shaping, cooking, and packing. In the end, it must not be soft and mushy when cut but fibrous and elastic, with porcelain-white color and oozing with freshness and rich flavor. Your taste buds will find new levels when tasting this freshly made cheese for the first time.

Pasteum is located only a few minutes from the Azienda Seliano and 6 miles to the south of the river Sele on a plateau of travertine, which also provided the building material for the town walls and the temples. It’s well-preserved and important Greek temples of Doric architecture rank among the best in the world. The highlights of the area include the Basilica, built about 550 B. C. which was dedicated to the Greek goddess of fertility Hera (the sister and wife of Zeus), the Temple of Ceres, dedicated to the goddess Athene and the Poseidon or Neptune Temple. Built at the same time as the Parthenon in Athens, it is probably the best preserved Doric temple in the world.
