Approximately 60 miles west of the provincial capital of Halifax, lies the quaint, lovely town of Wolfville, known for its orchards and vineyards. Located in the center of the Annapolis Valley, it has long been visited for its many cultural attractions at Acadia University Art Gallery and the Atlantic Theatre Festival. Due to its sheltered location, the area’s micro-climate provides the ideal situation for farming, especially apples. The area has been welcoming guests since 1605 with the settlement at the Habitation at Port Royal, birthplace of the Acadian people. Follow the story of the expulsion of the Acadians to Louisiana, immortalized in the famous poem by Henry Wadsworth Longfellow, ”Evangeline” as you visit nearby Grande Pre. Located on Main Street, the Tattingstone Inn is a Registered Historic Property, built in 1874. Set amid one and a half acres of manicured lawns and gardens, the Inn offers quiet, peaceful spots for relaxing or having a swim in the pool. The proximity to Acadia University as well as restaurants, shops and galleries makes the Tattingstone a very popular spot. The 9 rooms are each individually decorated with comfortable, beautiful furnishings and modern amenities such as high speed wireless internet, and a business center. The rooms have Queen size beds, comfortable seating, fireplaces and private baths. They are also equipped with cable television, DVD players and telephones. A full cooked-to-order breakfast is included each morning and served in the beautiful sun porch dining room.
Hands-On Master Cooking Class
Learn from Chef Jason during your master class at Le Caveau, the restaurant at Grand Pre Winery, how he “creates regional fare with global flair”. Your chef/instructor has an established network of local growers, fish mongers and farmers, to ensure he is sourcing the freshest possible ingredients to present to his customers. During your class you may go on a farm tour to pick local ingredients and visit with Chef’s friends. Whatever Chef Jason chooses for you to do, rest assured that you will learn some culinary secrets.and come away with some great recipes before returning to your Inn for a wee rest. Chef Jason invites you back to his kitchen for part 2 of your training, to help prep the ingredients for your upcoming delightful 4 course tasting menu with the perfect wines.

Raised in Chester, NS Chef Michael Howell returned to Nova Scotia after 20 years of travel and life around the globe. His impeccable culinary pedigree reflects time at five star restaurants in Chicago, Detroit, Toronto, New York and the Bahamas where he was executive chef at the renowned Green Turtle Club. As a Maitre Rotisseur of the Chaine des Rotisseurs and the leader of Slow Food Nova Scotia, he holds many awards and honors including having cooked twice at the James Beard House. “The challenge”, says Michael, “is to move beyond stereotypical regional cuisines”.
